Yeah, Hong Kong's a labyrinth! You found a good one. Try exploring the areas around Hollywood Road, especially west towards Sheung Wan. There are tons of tiny side streets crammed with little eateries, many catering specifically to locals. Look for places with mostly Cantonese signage – that's usually a good indicator. Also, wander around the backstreets near Man Mo Temple; that whole area is a goldmine for hidden food stalls and dim sum places that are ridiculously authentic. Prepare for some seriously intense crowds though, especially during lunch. It's a different kind of amazing compared to the big skyscrapers, way more chaotic and delicious.
