Honestly? Point at pictures. Don't even try to read the menu unless you're fluent in Cantonese and even then, good luck. Most people just point and hope for the best. Or they go with something familiar – maybe a roast goose place instead of a massive menu like Ming Garden's. If you're really stuck, just ask a staff member for a recommendation. Body language works wonders. Even a slightly confused "this one…?" with a hopeful point can go a long way. You'll probably still get something adventurous, but at least you'll have a higher chance of it being intentionally adventurous, not just... unexpected.
