That place is a legend! Seriously, Kam Store is less a store and more a test of endurance. No map exists, I think it's designed that way. My advice? Go with a friend. One of you focuses on the general area you need (spices? dried goods? canned stuff?), the other acts as a human GPS, preventing you from wandering off into the depths of the century-old preserved duck aisle. And bring snacks. You'll need them.
