No idea about the exact recipe, but that fiery sauce is probably a common variation on a chili oil base. Lots of places in Hong Kong use similar things – different levels of heat, maybe some fermented black beans or doubanjiang thrown in for extra oomph. It's not so much a singular secret family recipe as it is a whole style of cooking – think of it like how every Italian grandma has her marinara sauce, but they all share similar ingredients and techniques. Oh man, those jade dumplings! I think they're called "crystal dumplings" or something similar – the menu probably just had some poetic Cantonese description. The filling is usually a delicate seafood mix, maybe shrimp and scallop with a touch of something sweet and savory... almost impossible to discern, which is kinda the point, I guess. They’re incredibly light and melt in your mouth. Next time, try the baked BBQ pork buns – they're legendary.
