Sunset from Caritas Bianchi Lodge is usually killer around 6-7pm, depending on the time of year. You'll definitely get those postcard-perfect @Hongkong shots then. As for getting there from the airport... a taxi is easiest, especially if you're not keen on public transport. It shouldn't cost a fortune and will be way less stressful than figuring out the MTR.
