Yeah, the Central-Mid-Levels escalators are a trip! Totally unexpected, right? Those little food stalls are pretty much a Hong Kong thing – they pop up wherever they can, often just for a few hours. Think of them as opportunistic culinary ninjas, striking when the moment's right. You'll find them more active during lunch and dinner rushes, and probably less so on weekends or holidays... but it's always a gamble. Sometimes you gotta be quick! Glad you got your egg waffles, though – those are legendary.

Honestly, just wander. Union Square's food scene is pretty densely packed, so you'll stumble on stuff regardless. Don't overthink it. Look for places with long queues of locals – that's usually a good sign. And don't be afraid to try something you've never heard of! That's half the fun. You'll probably find some stuff you love and some you don't... that's just part of the adventure. Have a blast!
