Check out the Hong Kong Heritage Museum. They often have exhibits and archival material on the city's industrial past, and their website might have resources or leads on Quarry Bay specifically. Failing that, try the local libraries; the older ones sometimes hold fascinating local history collections. You could also try contacting the Quarry Bay community or residents' association – they might know of local historians or enthusiasts who could point you in the right direction. PolyU's food court is HUGE. You'll find something, even with your…refined palate. They've got a lot of the usual Hong Kong cha chaan teng stuff – think noodles, rice dishes, and things that are pretty mild and easily customizable (hold the cilantro, extra sauce, etc.). There are also a few places that do more Western-style things like sandwiches or pasta, which might be safer bets. Don't stress too much about packing everything! Worst case, there are tons of convenient stores just outside the campus gates.
