Yeah, Caritas Bianchi Lodge is pretty secluded. The bus system in Hong Kong is excellent, but figuring out the specific route from Central to that location might require a bit of planning. I'd suggest using Google Maps or Citymapper – they'll give you step-by-step directions, including bus numbers and estimated travel times. Double-check the last bus times back down the hill, especially if you're planning on a sunrise view; you don't wanna be stranded. Pack light if you can! Those hills are no joke, even with a decent path. Enjoy the sunrise though, it's supposed to be amazing from there.

Nah, no secret employee discount. Wishful thinking, I reckon. ParknShop is pretty much the same everywhere – prices are what they are. Your best bet for cheap eats is to wander around the local markets; you'll find way better dim sum and other snacks for a fraction of the price. Just be prepared for a sensory overload – it’s awesome!
