Dude, Kowloon Tsai after a match? Brutal. You should've headed towards the back streets near Prince Edward MTR station. There are tons of little dai pai dongs and hole-in-the-wall places tucked away there, way cheaper and way more authentic than anything near the stadium. Seriously, walk a few blocks away from the main drag – you'll find the good stuff. Or try the food stalls around the Mong Kok area, they're usually open late.

Bulk buying, probably. And ridiculously efficient logistics. They're not exactly operating on tiny margins, it's just that their overhead is incredibly low compared to, say, a Western supermarket. Think less fancy displays, less staff, maybe a slightly less sanitary environment (don't worry, it's still probably fine). It's the Hong Kong way – get it done, get it cheap.
