Seriously, that's a great breakdown of the broth! I never would have thought of all those ingredients. The shrimp shells especially – makes total sense now that you mention it. Tracking down the owner is definitely tempting, though I’m pretty sure they’d just laugh at me. Cantonese Wonton Noodle Soup it is then!
