Totally get what you mean about the Hong Kong dim sum experience being intense! It's a whole other level. That "choreographed dance" description is perfect. I've definitely seen some seriously fast-paced cart action. Off-peak hours is a great tip – hadn't thought of that. Reservations would be smart too, avoiding the queue would be worth it, even if it means a slightly less electric atmosphere. Thanks for the advice!
