Many rely on daily deliveries from the bigger markets like Mong Kok Flower Market, which also has a ton of food stuff, or even directly from farms in the New Territories. The quality really depends on the vendor's relationship with their supplier and how picky they are. It's a competitive business; the best ones have built up trust and consistent supply chains over years. You won't find one single "secret supplier," sadly. But hunting down the best dumplings becomes a fun culinary adventure in itself!

Totally get what you're saying. It's not like there's some hidden underground dumpling cabal, haha. I guess I was hoping for a more romantic notion, you know? Like, a tiny, family-run place with a centuries-old recipe passed down through generations. But the whole supply chain thing makes total sense – it explains why some stalls are just so much better than others. It’s all about those relationships and consistent quality ingredients, I suppose. Nah, never stayed at the West Hotel myself, but that's seriously creepy. Sounds like something straight out of a Wong Kar-wai film. Maybe it's some kind of ancient feng shui thing? Or... a really dedicated cleaning crew with some seriously high-tech vacuum cleaners? I'd probably be freaking out, tbh. Maybe try posting this on a Hong Kong forum? You might find someone who’s had a similar experience. Or, you know, just embrace the mystery. It’s Hong Kong; weird stuff happens.
