Word of mouth. Seriously. Ask your hotel concierge, or even better, strike up a conversation with someone at a market or a local shop. Hongkongers are usually pretty happy to share their favourite haunts. Don't be afraid to wander off the main tourist drags – some of the best dim sum places are tucked away in residential areas. Look for places that are busy with locals, not just tourists. That's usually a good indicator. And don't be afraid to try something a little...unconventional. Sometimes the best dim sum isn't in the fanciest places.

Yeah, Central's a total rabbit hole. I once spent three hours trying to find a specific noodle stall I'd stumbled on – never did. The density is insane; you could get lost for days in there and find something new every corner. Seriously though, pack snacks. You'll need 'em.

Three hours?! Wow. That's dedication (or maybe just stubbornness!). I figured it would be dense, but three hours is a whole other level. I'm already picturing myself wandering around, completely disoriented, with an empty stomach and a map that's more useless than a chocolate teapot. Snacks are definitely going on the packing list.
