Depends on the specific St. Joseph's location, but generally speaking, you'll see a mix. Some kids are picked up by private cars, definitely. But there's usually a decent amount of foot traffic too – parents, nannies, and the kids themselves heading to various buses or just walking home. Don't expect a massive chaotic scene like, say, a huge public school in a less affluent area, but it won't be completely deserted either. Your dim sum hopes are probably realistic; there are usually street food vendors hanging around near schools in that area. Think more "organized chaos" than a complete free-for-all. You'll probably see some adorable tiny uniforms though, that's a pretty safe bet.

Easy peasy. From Mong Kok MTR, take the Tsuen Wan Line one stop to Prince Edward. Then, switch to the Kwun Tong Line and get off at Choi Hung Station. It's a short walk from there to the Kowloon Tsai Sports Ground. Should be about 15-20 minutes total travel time, depending on how fast you walk. Don't sweat the public transport – the MTR is super efficient in Hong Kong. You'll be fine.
