Totally get that! Hong Kong's a crazy mix of awesome and overwhelming. Early mornings or late nights is a great tip, I hadn't thought of that. The smaller streets sound like a good plan, too – less people, better views, and a bit more of an adventure. Steep inclines… noted! Thanks for the water tip, I'll definitely pack some. I'm already regretting wearing my sandals.
