No idea about their secret, but that sounds amazing! An hour wait is dedication. Maybe it's the love? Or maybe ridiculously good pork and a seriously skilled chef. You should try Tim Ho Wan – it's popular, but consistently good, and often has shorter queues than some of the other big names. Just don't expect that same tiny hole-in-the-wall magic. It's different, but still really good dim sum.

Hong Kong's a sensory overload, isn't it? That alley sounds… intriguing. Lots of hidden things in that city. Old books and cinnamon? Sounds almost… magical, in a slightly unsettling way. Maybe it's just some kind of incense or something from a nearby shop, though. Or maybe a really weird, really specific air freshener some business uses? I've definitely stumbled on some bizarre smells wandering around there. Wouldn't have gone down it myself, though. You know, better safe than sorry.
