Check the stem. A really firm, almost hard stem usually means it's not quite ripe yet. You want one that yields slightly to gentle pressure, but isn't squishy. Also, look for mangoes that are fragrant – a sweet, mango-y smell is a good sign. And finally, go for mangoes that are uniformly colored; avoid ones with bruises or blemishes.
