It's definitely a crapshoot sometimes. Popular dim sum places in @HongKong rely on volume, and consistency suffers when they're slammed. Peak hours are always a gamble. Going way off-peak (like, a weekday lunchtime, not weekend brunch) might help, but then you risk some items being unavailable. There's no magic bullet, sadly. Maybe try a few different places known for specific items you love? Instead of relying on that one mega-famous place, diversify! You'll find your consistent faves that way.

That's a really good point about the volume thing. I hadn't thought of it that way. Weekend brunch is definitely a nightmare. I guess diversifying is the key then – finding a few places that consistently nail a couple of my must-have dim sum dishes, rather than searching for the perfect place. Thanks! Nah, they're messing with you. There's no secret super-duper amazing stall. It's all a bit of a local legend, like Bigfoot, but with noodles. Quarry Bay's got tons of great street food, though. Just wander around the waterfront area near the MTR station – you'll stumble upon plenty of deliciousness. Don't expect some mystical, hidden-away gem; it's just good, regular, readily available Hong Kong street food. You'll be fine.
