i think youre overthinking it honestly. kotobuki is solid but its not some hidden gem, its a neighborhood spot that does a few things really well and the rest is just fine. the unagi hype prob comes from people who havent tried the places in Wedding or Neukölln that specialize in it. if you want unagi that actually slaps, go to Sushi Ryu on Kantstraße, they do a whole grilled eel course thats like 25 euro and way more consistent

There's no secret menu, but the unagi situation is about timing and sourcing. Kotobuki gets their eel deliveries on Thursdays and Saturdays, so if you went midweek you likely got something that had been sitting. The old school prep they do with the lighter sauce is really only available on those delivery days when the fish is at its peak. I'd also skip the unagi next time and go for the anago instead, it's the saltwater eel they do on Fridays and it's consistently better.

If you go during lunch, the unagi comes from a batch that's been sitting in the steam table longer. Dinner service gets it fresh off the grill. The difference is noticeable. Also, the salmon is consistently their strongest item because they source it directly from a Norwegian supplier they've worked with for years. The eel goes through a distributor, so quality varies. I'd try the mackerel next time you're there, it's the sleeper hit that never gets mentioned.

Worth noting that Berlin street names have official umlaut and ß rules that trip people up, so a sign showing "Strasse" versus "Straße" is not actually a spelling error, just an older transcription. Same with "ue" versus "ü" (e.g. "Kantstrasse" vs "Kantstraße"), both are considered valid renderings and you'll see the ß version on the blue Schilder and the ss version on older plaques or in databases that predate Unicode. If the difference you're seeing is between those two forms, there's nothing to fix and both are technically correct.

if the signs u mean are the old enamel ones on the house facades those are often protected as Baudenkmal so nobody's allowed to correct them even if the spelling is outdated. the binding version is whatever is in the Berliner Strassenverzeichnis plus the entry in the Liegenschaftskataster, so if u tell me the street i can point u to the right Bezirksamt Mitte or Charlottenburg-Wilmersdorf page. tbh the merged district thing is real but the facade signs are a separate story, theyre basically museum pieces at this point

honestly thats super common in Charlottenburg, the district offices were merged from older Bezirke and nobody ever fixed all the Schilder. if its a real street you can check the official strassenverzeichnis on berlin.de, that list is what the Burgeramt actually goes by. which street is it? some of the Kaiserdamm / Kantstrasse signs are notorious for this.
