Schnitzelei's Secret?
so you found the schnitzel but missed the real move. the käsespätzle thing is fine but what you want is the "schnitzel to go" hack. if you call ahead 20 minutes before closing and ask for "nummer 17 zum mitnehmen" they'll do a whole schnitzel with the secret sauce wrapped in paper for like 6 euro. it's meant for staff meals but if you're chill about it they'll hand it over. eat it on a bench by the landwehrkanal while it's still hot, that's the actual berlin experience.
the real secret is the "schnitzel sahne" they do for regulars. it's not on any menu ever but if you ask for "das uebliche" some of the older waiters will know. it's a veal schnitzel with a cream sauce that has capers and a hint of lemon zest, served with these tiny boiled potatoes tossed in dill. only about three people working there still make it the old way from when the place first opened in the 90s
if you go on a tuesday night around 8pm and marcus is behind the bar, just nod at him and say "ja, das uebliche bitte". he'll know. starts around 18 euro but worth it
honestly the secret isnt really a secret anymore but yeah it's the käsespätzle. though i think the real trick is asking for it "mit röstzwiebeln" extra crispy on top. the cheese blend is supposedly from a small dairy in brandenburg, not imported some fancy thing.
the other thing people whisper about is the beilagensalat they'll do a side of if you're nice. it's basically just their house slaw but they add these pickled mustard seeds that make it pop. not on the menu but they always have the ingredients.
if you want the real insider move though ask for the schnitzel "wiener art" but with the käsespätzle instead of the standard potato salad. they'll do it if it's not too busy. hits different.
