Ramen Nirvana?

But... I couldn't help but wonder, do they have a secret ingredient? Something that makes their broth so unbelievably rich and flavorful? I'm already planning my next trip back, but I really need to know their secret. It was THAT good.

i think it's less about one secret ingredient and more about the fat emulsion process they do. talked to a cook at a bar near rosenthaler platz who used to work there, said they blend the broth with a specific ratio of back fat right before serving. gives it that creamy mouthfeel without being heavy. if you're craving something similar on a budget, the kotteri miso at yamato on kantstraße has a comparable richness and it's like 4 euro cheaper

honestly i think it's the tare they use, not just the broth. most places do a soy or miso base but nirvana's got this super funky fermented bean paste that adds layers you don't get anywhere else. if you're obsessed, hit up the kitchen supply shop on torstraße, they sell the same brand of shio koji that a few ramen spots use. cheaper than another bowl but less fun.

not a secret ingredient thing, more of a technique thing i think. the owner trained under a guy in sapporo who does this triple-straining process through different mesh sizes. that's what gives it that velvet texture without being greasy. if you're hunting for more, go to hako on weserstraße, they do a chicken-paitan that's equally obsessive about the broth clarity

What is the correct spelling for a street name that appears differently on multiple signs in Charlottenburg?

I noticed that the street name is spelled differently on three separate signs in the Charlottenburg area. Can anyone confirm the correct official spelling and whether this is a known issue? Worth noting that Berlin street names have official umlaut and ß rules that trip people up, so a sign showing "Strasse" versus "Straße" is not actually a spelling error, just an older transcription. Same with "ue" versus "ü" (e.g. "Kantstrasse" vs "Kantstraße"), both are considered valid renderings and you'll see the ß version on the blue Schilder and the ss version on older plaques or in databases that predate Unicode. If the difference you're seeing is between those two forms, there's nothing to fix and both are technically correct.

if the signs u mean are the old enamel ones on the house facades those are often protected as Baudenkmal so nobody's allowed to correct them even if the spelling is outdated. the binding version is whatever is in the Berliner Strassenverzeichnis plus the entry in the Liegenschaftskataster, so if u tell me the street i can point u to the right Bezirksamt Mitte or Charlottenburg-Wilmersdorf page. tbh the merged district thing is real but the facade signs are a separate story, theyre basically museum pieces at this point

honestly thats super common in Charlottenburg, the district offices were merged from older Bezirke and nobody ever fixed all the Schilder. if its a real street you can check the official strassenverzeichnis on berlin.de, that list is what the Burgeramt actually goes by. which street is it? some of the Kaiserdamm / Kantstrasse signs are notorious for this.
