Carambar's Secret Ingredient?

But the sauce...it had this unique, almost indescribable flavor. I kept trying to figure it out. Was it a special herb? Some kind of obscure pepper? I'm dying to know what makes their sauce so damn good. Anyone know the secret?

fwiw the real kicker at Carambar is they use a specific type of pecorino from a little shop in Neukölln, not parmesan. it's aged for way longer than usual so it gets this crumbly texture and a sharpness that cuts through the sauce without overpowering it. the guy who runs the place told me once he gets it from a deli on Weserstraße, forget the name but it's near that turkish supermarket

honestly if it was Carambar near Rosenthaler Platz they use a bit of anchovy paste in the base sauce, not enough to taste fishy but it gives that umami depth that's hard to pin down. lots of places in Berlin do that actually, it's a common trick in italian spots here. also pretty sure they finish it with some fermented chili oil they make in-house, saw a jar of it on the shelf once

tbh the real secret at Carambar is probably the butter. they use this cultured butter from a farm outside Brandenburg, it's got this slight tang that cuts through the richness. i've seen the owner bring it in from the farmer's market at Kollwitzplatz, the stall with the blue awning. that plus a pinch of nutmeg in the sauce, barely noticeable but it rounds everything out

What is the correct spelling for a street name that appears differently on multiple signs in Charlottenburg?

I noticed that the street name is spelled differently on three separate signs in the Charlottenburg area. Can anyone confirm the correct official spelling and whether this is a known issue? Worth noting that Berlin street names have official umlaut and ß rules that trip people up, so a sign showing "Strasse" versus "Straße" is not actually a spelling error, just an older transcription. Same with "ue" versus "ü" (e.g. "Kantstrasse" vs "Kantstraße"), both are considered valid renderings and you'll see the ß version on the blue Schilder and the ss version on older plaques or in databases that predate Unicode. If the difference you're seeing is between those two forms, there's nothing to fix and both are technically correct.

if the signs u mean are the old enamel ones on the house facades those are often protected as Baudenkmal so nobody's allowed to correct them even if the spelling is outdated. the binding version is whatever is in the Berliner Strassenverzeichnis plus the entry in the Liegenschaftskataster, so if u tell me the street i can point u to the right Bezirksamt Mitte or Charlottenburg-Wilmersdorf page. tbh the merged district thing is real but the facade signs are a separate story, theyre basically museum pieces at this point

honestly thats super common in Charlottenburg, the district offices were merged from older Bezirke and nobody ever fixed all the Schilder. if its a real street you can check the official strassenverzeichnis on berlin.de, that list is what the Burgeramt actually goes by. which street is it? some of the Kaiserdamm / Kantstrasse signs are notorious for this.
