honestly just go to any turkish supermarket that has a butcher counter, they almost always have liver, kidney and heart in the back if you ask. the one on sonnenallee near hermannplatz has them, just point at what u want. for lung and ear you'll prob have better luck at a polish deli, there's one on frankfurter allee near samariterstraße that stocks all the weird stuff. pure pig fat is just schmalz, every butcher has it but you gotta ask for it specifically or they won't put it out
The Turkish butchers at the Marheineke Markthalle in Kreuzberg are a solid bet for heart, liver, and kidney. For the ears and lungs, you'd be better off at the Polish shop on Potsdamer Straße near the S-Bahn, they keep those in the freezer. Pure pig fat is easy if you ask for Schweinefett or back fat, most German butchers like the ones at the Winterfeldtmarkt will sell you a block of it.

i'd say skip the big names and look at studiowest in prenzlauer berg, they do amazing japanese style but the waitlist is like 6 months. if u want something quicker, the artists at bitterlich tattoo in mitte are super underrated, especially for fine line. and honestly, walk past the instagram hype, go to a shop in person and ask to see their portfolio book, that's where the real stuff is.

One thing nobody's mentioned yet is the tattoo convention at Arena Berlin, usually in early summer. It's a good way to see a bunch of styles in one afternoon and talk to artists face to face without committing to a shop. I found my guy there three years ago, he works out of a tiny studio near Boxhagener Platz and does amazing neo-traditional, but he rarely posts on Instagram so you'd never discover him otherwise. Bring cash if you go, a lot of the booths only take that on the day.
