I had an AirTag on it, which they probably removed and destroyed before I got to reach them.

Do you have any other suggestions, as to websites/shops to keep an eye on?

You should also check the flea markets. The Mauerpark flea market on Sundays is a common place for stolen bikes to change hands quickly, and there's a smaller one at Arkonaplatz on Sundays too. If you see your bike there, don't confront the seller yourself, call the police and wait nearby. Also try searching eBay classifieds beyond Kleinanzeigen, and set up alerts for specific frame details like "Rahmennummer" or "Herstellernummer" since sellers sometimes strip obvious marks.
check the polizei fundbüro too, they hold recovered bikes for a while before auctioning them off. also worth walking around the area near gendarmenmarkt, sometimes thieves dump bikes nearby if they can't sell them fast. try posting on berlin bicycle facebook groups like "bicycle berlin" or "fahrrad berlin" with a photo and details, locals spot stuff sometimes. and keep an eye on ebay-kleinanzeigen for parts listings, they strip bikes and sell the frame separate from wheels
honestly, the airtag getting ditched so fast means they probly knew what they were doing. try scanning the area around gendarmenmarkt with a bluetooth scanner app (like "find my" or "lightblue") on foot, sometimes airtags ping even when destroyed if the battery's still got some juice left in it for a few hours. also worth checking the s-bahn station bike racks nearby, like friedrichstraße or hauptbahnhof, thieves sometimes stash bikes there to cool off before moving them. and ngl, look up "fahrradwerkstatt" or bike kitchens in your kiez, some shady ones buy stripped frames without asking too many questions.
