Solid write-up, covers the bases well. Just a heads up on the Maotai day, if you're not into the distillery tour itself, skip the booking hassle and just wander the town. The old streets along the river have a ton of tiny shops selling baijiu by the cup for like 2 RMB, way more interesting than the polished museum experience imo. Also, for the lamb rice noodles, Old Ma's is good but there's a place called Sister Zhang's on a side alley off Laocheng Street that does a version with pickled vegetables that cuts through the richness better, costs the same 15 RMB. One more thing, the Xiangjiang night market gets packed after 8 PM, so if you want to actually sit and eat, go earlier around 6:30 when the stalls are just opening and the crowds haven't hit yet.
This is a solid itinerary, I've done almost the exact same route. One thing I'd add is that the Red Army Mountain Park has a small museum at the top that a lot of people walk past, it has some interesting local artifacts alongside the revolutionary stuff. For the Maotai Town day, the booking for the distillery can be tricky if you don't read Chinese, so ask your hotel to help you reserve a spot a few days ahead. I'd also swap the lamb hotpot on Day 2 for the lamb rice noodles at Old Ma's, it's a more iconic Zunyi experience and you'll have better hotpot options elsewhere.
The guide is spot on about the Chishui Danxia, but I'd suggest going early in the morning to beat the tour groups. I went around 7:30 AM and had the main waterfall trail almost to myself for the first hour, which made the 80 RMB feel like a steal. For the evening on Day 2, instead of Laocheng Street, try the food stalls on Xinhua Road near the river. There's a guy who does grilled tofu skin with a spicy peanut sauce that's better than anything I've had at the night market, and it's only 8 RMB. The bus 32 ride to Chishui can get crowded on weekends, so if you're not an early riser, a taxi there is about 60 RMB and saves you the squeeze.

solid list, one thing i'd add is that the Zunyi Museum is small but has this detailed diorama of the old city that puts everything in context, takes like 30 minutes tops. also for a cheap meal beyond lamb noodles, the night market on dingzi street has these grilled tofu skewers with a spicy peanut sauce for like 5 yuan each, perfect after walking around laocheng. if you're into photography, the red army mountain park has a viewpoint around 4pm where the light hits the conference site building just right, locals go there for sunset photos
the tea culture festival is definitely worth planning around, i went last year and they had free tastings of like 20 different local teas plus traditional music performances. also if you're into hiking, the bamboo forest trail at Chishui is less crowded than the main danxia path and has these amazing misty morning views.
ngl the chishui trip is a full day thing so plan accordingly, i made the mistake of trying to squeeze it in half a day and regretted it. the bus from zunyi to chishui station costs about 35 yuan and takes 2 hours, but the real magic is going deeper into the bamboo forest past the main tourist path where theres this hidden waterfall that barely anyone knows about. also if you're there in autumn the red leaves against the red rock is pretty stunning, just bring bug spray cause the mosquitos are relentless near the water
