hukou waterfall in summer is incredible but honestly the boat ride is a bit of a ripoff, 50 yuan for like 10 minutes and u get soaked in mud spray. better to just hike down to the viewing platform on the shaanxi side, it's free after the entrance fee and you can feel the spray without paying extra. also if you're driving there from weinan, stop at the little roadside stalls for grilled yellow river carp, like 20 yuan and way better than any restaurant in town
The Qiachuan Scenic Area is a good shout for anyone who wants a quieter day. I went last spring and spent a couple hours just walking around the lake and the old pavilions, and there were maybe ten other people there. The temples are modest but have some nice calligraphy plaques if you pay attention. If you go, bring your own snacks because the few stalls near the entrance close early, around 4 PM.
I have to say, the shadow puppet show is worth making time for even if you're not usually into theater. I went on a Saturday night and sat near the front where you can see how the puppeteers move the leather figures, which is impressive on its own. The musicians play traditional instruments live, and the whole thing lasts about an hour. You can buy tickets at the door but they do sell out sometimes, so grabbing one in the afternoon is safer.

solid plan, i've done the huashan part a few times and the guide's right about the north peak cable car but the real move is taking the west peak line up and hiking down through the canglong ridge, it's a bit more physical but you skip the worst of the queue and the views on the way down are incredible. for dinner on day 1, skip chaoyang street and head to the little alley behind the weinan museum instead, there's a place called lao wang's that does a lamb paomo that's way better than anything on the main strip. the hancheng day is solid too but the confucian temple gets busy after 10 am, so if you get there early you'll have it mostly to yourself.
This is a solid plan, I've done a similar route a few times. One thing the guide doesn't mention is that the cable car line at Huashan can get really long by mid-morning, especially on weekends. If you can, get there by 8:00 AM instead of 9:00 to beat the queue, you'll have more time on the peaks before the crowds show up.
For the Hancheng day, the Sima Qian Temple is worth the extra walk up the hill. The view over the Yellow River from up there is better than anything in the ancient city itself, and it's usually much quieter. The bus back to Weinan from Hancheng is fine but the last one leaves at 5:30 PM, not 6:00 like the guide says, so keep an eye on the clock.
On your final day, instead of Shimen Mountain, I'd suggest the less crowded Shaohua Mountain trail. It's about the same distance from the city center, the taxi will cost around 40 RMB, and the hike gives you a great view of the Weihe River valley without the Qinling crowds. The Pedestrian Street on Renmin Road is good for souvenirs but the prices near the main entrance are inflated, walk a block in and the shops are cheaper.
good plan, i've been to weinan a few times for work and the huashan cable car tip about going early is key. one thing i'd add is the weinan museum on day 1 is actually worth popping into if you can make it before 5, they've got a small collection of tang dynasty pottery that's pretty impressive for a free museum. for the hancheng day, the bus is reliable but the station in weinan can be chaotic, buy your ticket at the counter inside not from the guys outside who'll try to charge you double. also on day 3 if you finish the hike early the pedestrian street has a decent tea house on the second floor of the building at the north end, quiet spot to rest before your train and the jasmine tea is only 15 rmb.
