the day 3 market stuff is the part i'd push back on a bit. yinhe road morning market is fine but the real one locals use is over on the west side near the bus station, starts around 5:30 and the dried mushrooms there are way cheaper than the tourist stalls. jade market on feicui is mostly for show these days, actual trading happens in the back rooms and unless u know someone ur just watching.
one thing nobody mentioned: the shadow puppet theater on xi men street is genuinely good but the 7:30 show is the tourist one. if u ask around there's a smaller troupe that does shows in a courtyard off wenxing for like 20 CNY, more old-school, sometimes just a few people watching.
also the 300-400 for a private car is on the high end, u can usually negotiate down to 250 if u go through ur guesthouse instead of a taxi driver
solid writeup, the volcano park and Rehai combo on day 2 is exactly how i'd do it. one thing tho, most people skip the WWII stuff and that's a mistake. the Dianxi Anti-Japanese Memorial Cemetery on the hillside near Laifeng Mountain is free and pretty sobering, lots of history with the Burma Road and Flying Tigers. also if you're doing the hot springs, the ones in Rehai proper are pricey, i usually go to the smaller spots around Heshun for like 60-80 CNY instead. and yeah bring cash for the mianbao che, drivers rarely have change for a 100.

for the hot springs, the Rehai ones are overpriced imo. there's a place called Huanggua Qing further out that locals use, entry is like 80 and the water comes from the same source. u gotta arrange transport tho, no mianbao che goes there directly.
