This is a solid itinerary, especially the Xiapu day. A few things I'd add from experience. The Donghu night view is nice but gets crowded with local dancers and singers, so if you want a quieter evening, walk to the north side of the lake near the sports center. Also, the Taimu Mountain hike is tougher than it sounds, bring more water than you think you need, there's only one shop near the summit and it's overpriced. For the Xiapu mudflats, check the tide tables before you go, low tide is essential for the best reflections and the S-Bend shot, and you can ask any hotel front desk to look it up for you.
yeah this is a great route, i've done almost the exact same trip. the one thing i'd flag is the timing on day 1, if you finish the museum and temple by like 3pm, you've got a couple hours to kill before the sunset. instead of just waiting, walk east from the temple down bayu road, there's a little alley market around block 47 that sells dried persimmons and these amazing peanut cakes, only open in the afternoon. grab a bag for the taimu hike the next day.
for the mountain, the bus from ningde station is fine but check if it's the express one, the regular bus stops at like 8 villages and takes almost an hour. the express is marked with a yellow sign, leaves on the hour. also the bamboo rice at the base is good but the real move is the fried river shrimp from the old lady with the blue cart near the ticket gate, 15 RMB a portion, way better than the restaurant stuff.
xiapu tip nobody mentions: the photography museum has a small balcony on the second floor with a decent view of the mudflats, but the real hidden spot is the roof of the seafood market building, you can walk up the fire escape and get a 360 view of the whole bay. just go before 11am when the market gets crazy busy
great plan, covers the essentials well. one thing i'd add for the downtown day is that the Ningde Museum has a small exhibit on the She ethnic minority that's easy to miss, it's in the back room past the ceramics hall. their traditional clothing and silverwork is really distinctive, worth a quick look.
for Taimu Mountain, the bamboo rice at the base is fine but if you're willing to walk another 5 minutes past the village, there's a family-run place called Auntie Chen's that does a better version with pork belly wrapped in the bamboo, about 45 RMB. they'll also refill your water bottle for free if you ask nicely.
the Xiapu mudflat timing is key but also consider going to the north side of the S-Bend instead of the main viewing platform, it's less crowded and the light hits differently in the morning. there's a small path behind the souvenir stalls that leads there, you'll see a few tripods set up if you're early enough.

Nice to see Taimu Mountain getting the spotlight it deserves. If you go, try the back route from the Jiuli Lake entrance instead of the main gate, it's less crowded and the cable car line is shorter on weekends. The museum is small like someone said, but the Maritime Silk Road section has a nice replica of a Song dynasty trading ship that's worth a look. For the seafood market, the grilled eel at stall 12 near the back is better than the steamed crab in my opinion.
honestly this is a solid list, you covered most of the big ones. one thing i'd add is if you're in xiapu for the mudflats, try to hit the shajiang s湾 (S-shaped bay) around low tide instead of just the observation deck. the light hits different and you'll see the locals actually out harvesting seaweed, makes for way better photos than the touristy spots. also, for the tea plantation thing, the pinpinxiang tour is nice but if you're on a budget, just walk into any small tea shop on chaling road and ask for a tasting, most will do it for free if you buy a small bag. the museum is worth it but honestly it's pretty small, you can do it in like an hour, don't plan a whole afternoon around it
Great list, really solid coverage. One thing I'd add is if you're doing the Taimu Mountain hike, take the side trail to the "One Line Sky" crevice early before the crowds show up, it's this super narrow gap between rocks and you can barely squeeze through, pretty unforgettable. Also for the white tea, skip the fancy plantation tours and just grab a seat at any random tea house in Fuding's old town, the old ladies running them will brew you cups all afternoon for like 20 RMB and tell you stories about the harvests.
