Really solid outline for three days, you've covered the main bases well. One thing I'd add is that the tea house on the bridge gets packed around sunset, so if you want a table by the window you should get there by 6:30 or so.
For the New District day, the Central Park lake has a walking bridge that connects to a small island with a pavilion. Most people don't bother crossing it but it's a quiet spot to sit for a few minutes, and you can see the whole park from there.
If you're into photography, the Riverside Art District has better light around 4pm when the sun hits the murals from the west side of the canal. Morning shots end up with a lot of shadow.

for the riverside art district, there's a tiny bakery at the end of the canal near the old footbridge, they do these steamed buns filled with red bean paste and a bit of osmanthus. 3 yuan each and they're warm from the steamer until about 11am. not a meal but a good snack while you're walking
and if you're at the night market and want something sweet after the skewers, look for the old guy with the cart selling tanghulu near the north exit. he coats the hawthorn skewers in a really thin caramel that cracks when you bite into it, better than the ones at the main stalls

that spicy tofu at the night market is legit but heads up, the stall on the corner near the old pharmacy is the original one, been there 40 years, the others copied the name. also if you're up for it, the 101 bus to qinglong mountain drops you right at a little noodle shop called lao wang's, get the dan dan noodles before you hike, they fuel you up for like 8 yuan. the guide's tram tip is good too, line 1 has wooden benches and the conductor sometimes points out old buildings if you chat with them
i'd skip the opera if you're short on time tbh, the performances are good but the theater itself is kind of run down and the seats are tiny. instead check if the old town has a free shadow puppet show on friday evenings near the square, way more intimate and the puppeteer's been doing it for 50 years
