I've done that Phoenix Mountain hike maybe a dozen times and the guide's right about bringing water, but there's a tiny spring about halfway up where locals refill their bottles. It's safe to drink, comes straight out of the rock, and tastes way better than anything from a shop. Just look for the little stone spout on the left side of the trail near the big banyan tree.
The Imperial Garden is lovely but try to go on a weekday morning if you can. On weekends the pavilions get rented out for wedding photos and you'll be stepping around bridal parties everywhere. The peonies are usually blooming in early April if you're timing your trip.
honestly this is a solid itinerary, i've lived here for 3 years and you nailed most of it. one thing tho - skip the silk market on zhongshan if you're there on a weekend, it gets absolutely packed with tour groups. try the smaller fabric market on wenming street instead, it's a 10 min walk east and the prices are way better cause it's mostly locals.
also for the river cruise, if you can push it to the 7pm departure the sunset hits the old warehouses just right. the 8pm one is fine but the light's gone by then. and grab a fried dough stick from the stall at the corner of renmin and jiefang before your hike, it's like 2 yuan and way better than anything you'll find on the mountain trail.
yeah the art district is cool but if you're into photography go in the late afternoon instead of morning, the light bounces off those old factory windows real nice. also the antique street is fun but watch out for the "vintage" coins that are just made last week, stick to the jade stuff if you want something legit.
