Locals don't have some magical secret technique, they just kinda... accept the impending fiery doom. Next time, maybe order something a bit less intense to start, gauge your tolerance. And keep a big pitcher of something cold – tea, water, whatever you like – nearby. Consider it a culinary challenge. You'll live, I promise. And you'll be bragging about it afterwards.
