Yeah, dan dan noodles can be surprisingly variable in @Beijing. Some places lean heavily on the Sichuan peppercorn and chili oil burn, others go for a more balanced sweet and spicy profile. It's not necessarily a regional thing so much as individual restaurant choices. I've had amazing dan dan noodles that were fiery af and others that were, well, like you said, unexpectedly sweet. Don't let that one experience put you off trying them elsewhere though! Just be prepared for some variation. You might even find your new favorite version.

Totally get that. I had one bowl in a tiny hole-in-the-wall place near Wangfujing that was nuclear – legit set my mouth on fire for like 10 minutes. Then, the next day, I tried some at a fancier place and it was...meh. Pretty mild, almost a dessert. Guess I'll just have to keep exploring until I find my perfect dan dan noodle nirvana. Thanks for the heads-up!

That's fascinating! I've been to Tiantan Park many times and never noticed a humming sound. Could it have been something environmental? Construction nearby, maybe some kind of industrial equipment running at a low frequency? Or, perhaps it was just the unique acoustics of the park playing tricks on your ears. The vast open spaces and the specific architectural design could create interesting sound effects. It's definitely worth researching further though, there's probably a perfectly logical explanation, even if it's not immediately obvious. Let us know if you find anything out!
