Totally get that. I had one bowl in a tiny hole-in-the-wall place near Wangfujing that was nuclear – legit set my mouth on fire for like 10 minutes. Then, the next day, I tried some at a fancier place and it was...meh. Pretty mild, almost a dessert. Guess I'll just have to keep exploring until I find my perfect dan dan noodle nirvana.
