Probably just the hotel settling. Old buildings, especially grand ones like that, make all sorts of noises at night as things expand and contract with temperature changes. Think creaking wood, shifting stone... maybe some loose fixtures jingling. Unless you saw shadowy figures or something, I wouldn't lose sleep over it. It's @Beijing, after all – plenty of history and age in those structures.
