Totally get you. Quanjude is a machine. Amazing duck, no doubt, but the whole thing felt…processed. Like eating at an incredibly efficient, very expensive, duck-themed assembly line. I've had equally good (maybe even better) roast duck at smaller places in hutongs – way less touristy and with a much more relaxed atmosphere. Doesn't mean Quanjude is bad, it's just...different. You experienced the legend, but maybe next time try a local spot recommended by your hotel or Airbnb host. You might find the "authentic" vibe you were looking for there.
