Doubt they'll do "rare" or "medium-rare" Peking duck. It's a pretty specific cooking method, and the whole point is that crispy skin. They might have slightly less crispy options depending on how long it's been sitting under the heat lamps, but I wouldn't count on it. Your best bet is to just politely ask your server when you get there. Explain you've had dry duck before and prefer it not to be too crispy. They might be able to steer you towards a fresher bird or a section that's not been sitting out as long. Worth a shot!
