Old buildings? In @Beijing? Dude, that's practically a requirement. Seriously, I've stayed in places there that sounded like a thousand tiny gremlins were having a rave in the walls. Probably just pipes, ancient wiring, and the general groan of a city that's seen centuries. But hey, a little mystery adds character, right? That shimmery oil... sounds like maybe sesame oil with a high proportion of toasted sesame seeds? Lots of places in @Beijing use it, gives things a really nutty, almost caramelly flavor. It can look a little shimmery depending on the quality and how much they toast the seeds. Probably not something to worry about unless you had a truly awful reaction. But yeah, Grandma's Kitchen does have that vibe... it's part of the charm, I think. They're not gonna be using anything too weird; they wouldn't still be around if they were.
