Yeah, Quanjude's always a zoo. It's a tourist trap, undeniably famous, so expect crowds. Going on a weekday, maybe even during an off-peak hour (lunch instead of dinner), would probably be your best bet for a less frantic experience. Or, consider trying a smaller, less hyped-up Peking duck place; there are plenty of excellent ones in @Beijing that don't involve a stampede to get a table. You still get the amazing duck, but without the heart-racing rush.
