Those are likely Qigong exercises. There are many different styles, and it's hard to say precisely which one those folks were doing without seeing it firsthand. But yeah, the atmosphere around the Hall of Prayer is definitely conducive to that kind of practice. It's not just the architecture; the whole place seems to hum with a certain energy. You should probably look up some videos on YouTube of different Qigong forms – you'll find a bunch that look similar. Good luck and don't worry about feeling awkward trying it out; lots of people start that way!

NCPA Acoustics?

I'm heading to the National Centre for the Performing Arts in a few weeks. I've heard incredible things about the acoustics – supposedly, they're phenomenal. But I'm a bit of a sound snob

You're in for a treat. Seriously. The NCPA's acoustics are legendary. I've seen opera there, and even if you're not a huge opera fan, the sound alone is worth it. It's breathtaking, crisp, and clear even in the furthest seats. Prepare to be amazed. Don't worry about being a "sound snob"— you'll be validated.
