Pipes. Seriously. Old hotels, especially ones as grand as the Dong Fang, often have extensive, ancient pipe systems. Thermal expansion and contraction throughout the night, combined with maybe some minor settling or shifting of the building itself, could easily cause a faint, almost melodic tinkling from somewhere deep within the walls. It's probably nothing sinister, just the building groaning a little. Think of it as the hotel's lullaby.
