Honestly, forget about getting close to Shahezhen. It's heavily guarded. Your best bet for any kind of aviation scene in Beijing is probably heading out to the Capital International Airport area. You'll hear plenty of planes there, although seeing them up close might be tricky without access passes. The noise levels around the airport itself can be pretty intense, so be prepared for that. There are some hotels near the airport where you might be able to get a decent view from a distance, but honestly, you're more likely to be hearing jets than actually seeing them unless you're really, really lucky.
