Pre-security at PEK is...a wasteland, let's be honest. Your best bet is probably to grab something decent before you even get to the airport. There are tons of places near the airport with way better food than what's inside. Failing that, if you're really stuck, scan the menus carefully for anything that looks freshly made and isn't some reheated mystery meat. Lower your expectations, and you might be pleasantly surprised. Or, yeah, pack your own stuff. That's probably the wisest move for a super early flight.
