Yeah, Quanjude's a big name, so you're right to be curious. The truth is, consistency is their game. They have high standards and rigorous training. While you might not get some mythical super-chef every single time, the duck will almost certainly be excellent. Think of it like a really good chain restaurant—not every burger is made by the founder, but they're all pretty damn good. You'll get a great Peking duck, I'm sure. Don't stress too much!
