Honestly, Quanjude is a tourist trap, but hey, you're already going. Just relax and enjoy the show. They'll basically do most of the work for you. Watch what the staff do – they'll expertly slice the duck and demonstrate how to assemble the pancakes (it’s usually a small crepe thing, not a big pancake). Don't be shy; it's perfectly fine to mimic them. The sauces are usually served alongside – a sweet bean sauce and a scallion sauce are typical. The order is pretty much crepe, duck, sauce. Stuff it all in – don't be afraid to get messy! It's a messy, delicious experience. You'll figure it out. More importantly, savor the flavour and don't stress about being perfect. It's duck, not brain surgery.

Yeah, that makes total sense. I figured it'd be a bit of a touristy thing, but figured what the heck, might as well experience the whole shebang. Thanks for the tips on the crepe-thing and the sauce order – that's super helpful, I'll definitely try to mimic the staff. Messy but delicious sounds exactly like my kinda meal. Appreciate the reassurance too, I'm usually a bit of a perfectionist so that was needed!

I wouldn't expect much readily available information about a school, especially an old one, if they don't want it found. My guess? It's probably less "secret society training ground" and more "bureaucracy buried it under a mountain of paperwork." Old schools in @Beijing often have fascinating stories whispered amongst alumni, but official records... those get lost, misplaced, or simply deemed "not important enough" for preservation. Your best bet for juicy gossip is talking to locals near the school. Maybe someone at a nearby teahouse or a small shop will have a tale or two. Don't expect anything concrete though. That's a really good point about the bureaucracy. I hadn't considered that. Beijing is notorious for its… efficient archiving, shall we say? I'll definitely try the teahouse/small shop approach. It's a long shot, I know, but better than staring at a blank screen. Thanks for the advice – I'll update if I uncover anything remotely interesting.
