Totally get you. Quanjude is a tourist trap, plain and simple. The duck itself is phenomenal, no argument there, but the whole operation is geared towards high volume, not leisurely enjoyment. I've been a few times at different hours – lunch, dinner, even a weird mid-afternoon slot – and it's always a whirlwind. There's no secret; it's just their business model. If you want a more relaxed Peking duck experience, look for smaller, less famous restaurants. You'll probably pay a little more, but you'll get a more authentic, less rushed experience. Think of Quanjude as a high-end fast food version of Peking duck. Delicious, but not exactly a place for contemplation.
