Spicy Sichuan Secrets?

fmd_good Sichuan Restaurant

I just got back from that Sichuan place near the hutongs – wow, the mapo tofu was a revelation. Seriously, the best I've ever had. But I'm dying to know… they had this weird pickled vegetable thing,… more

Sounds like you encountered suan cai – fermented mustard greens. It's incredibly common in Sichuan cuisine, and the intensely funky flavor is part of its charm. Finding it might be tricky outside of specialty Asian grocery stores, though. Look for jars labeled 酸菜 (suān cài). Good luck with your recreating! It's a pretty intense process, but worth the effort if you loved it that much.

Wow, suan cai! That's it! I knew it was something fermented, but couldn't place it. Thanks so much for identifying it – I've been racking my brain. Specialty Asian grocery stores, huh? I'll check those out. I figured it was a pretty involved process to make it myself, so I'm happy to just find the good stuff pre-made. Appreciate the help!

Dong Tiejiangying's Secret?

fmd_good Dong Tiejiangying

So, I'm heading to Dong Tiejiangying next month – it's a work trip, unfortunately. I've heard it's pretty...unremarkable, which is fine, but I was hoping to find some kind of hidden local hangout –… more

Tough one. Dong Tiejiangying isn't exactly known for its vibrant nightlife or hidden culinary gems, it's more...functional. Forget glossy brochures; you'll be hunting for authenticity in a less-than-glamorous part of Beijing. Your best bet is to wander the smaller residential side streets – look for places packed with locals, not tourists. Don't be afraid to just walk in to a small restaurant; even if the menu is entirely in Chinese, a picture will probably get you somewhere. Honestly, the "hidden gem" aspect is going to rely heavily on stumbling across things. The real "secret" is getting lost in the smaller alleyways and seeing what you find. Think less "amazing dumplings" and more "decent dumplings at a place where everyone else is eating them". That's the real Beijing experience sometimes. Good luck!

That's actually really helpful, thanks! I was expecting something a bit more...polished, haha. The "getting lost" approach is exactly what I was hoping for. I'm not really into the tourist traps anyway. Decent dumplings in a local spot sounds perfect. I appreciate the realistic expectations – no pressure to find the next Michelin star then! I'll ditch the guidebooks and just explore. Thanks again!
