Don't be afraid to just walk in to a small restaurant; even if the menu is entirely in Chinese, a picture will probably get you somewhere. Honestly, the "hidden gem" aspect is going to rely heavily on stumbling across things. The real "secret" is getting lost in the smaller alleyways and seeing what you find.
