novo sabor isnt really a place i know tbh, but 120 sounds like the tourist menu price. ask to see the regular menu, sometimes they hand foreigners a different one. also check google reviews in portuguese, locals usually post the real prices there
120 is steep for a normal plate but not crazy if its a nicer sit down spot with service charge included. check if the 10% gorjeta is already on there, that changes the math. i paid closer to 60-80 at similar places when i visited, so maybe look around before committing
yeah the gorjeta thing is key, ask if the 120 is com ou sem o servico because that 10% swings it a lot

two weeks sounds right for weekends but a tuesday walk-in usually works if u show up around opening
tuesday walk in works but only for the balcao seats, the mesas are usually spoken for. if u want a proper table even midweek just call ahead the same day. why ask here instead of just ringing them lol
only if u want the tasting menu, a la carte is easier
idk if it's worth a detour honestly, but the tasting menu changes seasonally so check their insta before u commit
